Strawberry, Feta cheese salad

With more demand of barbecue items and salads ranging from exotic to fruity, one always find themselves craving for new ideas to accompany their well cooked barbecue chicken or steak. Keeping the busy schedules in mind, I came up with this hearty and nutritious salad that is everyone’s favorite especially in summer months. It gives the option of using both fruits and vegetables to enhance its flavor.

Difficulty level: Easy

Servings: 5 – 6 people

Ingredients for the salad:

  1. Two to three tomatoes cut in to cubes.
  2. 3 medium size cucumbers
  3. 1 full feta cheese bar cut in to cubes. Maximum yield of 2 cups.
  4. 8 – 10 strawberries  cut in to halves
  5. 1 bunch of romaine lettuce shredded thinly

Dressing:

  1. 1/2 a cup olive oil
  2. few drops of lemon
  3. salt to taste
  4. 1 tsp black pepper
  5. 1 tsp paprika powder

Toss all the ingredients in a large salad bowl by paying special attention to feta cheese cubes as not to crush them. Combine all the ingredients of a dressing in a separate bowl and add it to this mixture by stirring slowly so all the ingredients are covered. Refrigerate for 30 minutes and serve with your favorite meal. The sweetness of strawberries and the flavor of feta cheese gives this salad a unique taste each time you had a bite.
